Description

These Cottage Cheese Egg bites call for 3 simple ingredients in the base recipe and they make a delicious and easy breakfast option.


Ingredients

  • 12 eggs
  • 1 1/2 cups cottage cheese
  • 3/4 cup shredded cheese of choice
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1.  Preheat the over to 350 degrees. Line two muffin pans with silicone muffin liners and lightly
    spray then with cooking oil. Set aside.
  2. Place all ingredients in a blender and blend until smooth.
  3. Pour the blended egg mixture into the muffin cups until they are about 3/4 of the way full.
  4. On the bottom rack of the oven, place a shallow glass casserole dish filled 1/2 way full with
    water. Place the muffin trays on the rack above the water dish and bake for 18-22 minutes, until the eggs are set and cooked through.
  5. Allow the egg bites to cool for a few minutes and enjoy!
