- 12 eggs
- 1 1/2 cups cottage cheese
- 3/4 cup shredded cheese of choice
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Preheat the over to 350 degrees. Line two muffin pans with silicone muffin liners and lightly
spray then with cooking oil. Set aside. - Place all ingredients in a blender and blend until smooth.
- Pour the blended egg mixture into the muffin cups until they are about 3/4 of the way full.
- On the bottom rack of the oven, place a shallow glass casserole dish filled 1/2 way full with
water. Place the muffin trays on the rack above the water dish and bake for 18-22 minutes, until the eggs are set and cooked through. - Allow the egg bites to cool for a few minutes and enjoy!
