Strawberry-Tomato Salsa

I needed a quick snack the other day, so I pulled a container of salsa out of the fridge.  There was instant disappointment when I noticed it was almost gone.  Not enough for a good snack.  There was also a container of diced strawberries, leftover from a picnic lunch we’d had the day before. Hmmmmm….could this work?

I mixed the two together and it. was. perfect.  I love traditional fresh salsa and the strawberries added a surprising sweet touch.  I loved it and made a mental note to make some strawberry-tomato salsa in the future.

A few days later, I was at the grocery store and organic strawberries were on sale for $1.89 a pound.  The universe was telling me to make strawberry-tomato salsa.  So I did.  And I’m glad I did.  This is such a fun twist on traditional salsa and makes a perfect snack.  I’m sure I’ll be bringing this to some cook-outs this summer, too.

A fresh and colourful summer salsa recipe


Ingredients

Scale
  • 1 lb. strawberries, diced
  • 2 roma tomatoes, cored, seeded, and diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon orange juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar (I used Xylitol)


Instructions

  1. Mix all ingredients in a medium bowl.  Cover and refrigerate for at least one hour before serving.

  1. Love it! its really good when you add pineapple and mangos too! <3 super tropical! The second I find organic berries i'm all over this dish! =) my stupid food rule is keeping me from food I love and i'm starting to think I need to grow these guys stat!
