The best part about summer? THE FOOD. Fresh, local produce just can’t be beat. Among my favorite are the summer tomatoes!

Summer food is just the best food. A few summers ago I grew tomatoes for the first time. I just happen to be the only person in my family who likes tomatoes. It’s so sad, isn’t it? How can a person not like tomatoes?

I had to figure out ways to eat up all the tomatoes I grew, and roasting them became a quick favorite. Roasted tomatoes are like heaven. Roasting them brings out their sweetness and concentrates the flavor. I easily eat a whole tray by myself.

Enjoying them alone can be lonely, so I knew I had to share this simple, yet incredibly tasty recipe for roasted tomatoes with you.

If you’ve never tried roasted tomatoes, stop what you’re doing and try it! I’m telling you, they are amazing. Not overusing that word; they really are. If you don’t have homegrown tomatoes, head to the farmer’s market. You need to make these!

Recipe Ingredients–What You Need

This recipe calls for simple ingredients and it only takes a few minutes of prep time.

2 pounds tomatoes

A number of different tomatoes will work here. The best tomatoes for roasting are roma tomatoes, grape tomatoes, and plum tomatoes. I have roasted just about every kind of tomato, though, and have always loved the results, so feel free to use whatever type of tomato you have! You can even use a variety of tomatoes. Just find good tomatoes for the best flavor.

2 tablespoons avocado oil or olive oil

salt and pepper

1 tablespoon Italian seasoning blend

You can use a store-bought blend or make your own using dried herbs like basil, thyme, parsley, oregano, marjoram, and/or rosemary. Fresh herbs are also delicious if you have some growing in your garden or you have some on hand!

Optional: Add whole garlic cloves to your roasting tray.

How to Make Oven Roasted Tomatoes

  1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Core your fresh tomatoes and cut them in half in the middle (around the equator, not lengthwise). If using smaller tomatoes, cut them in half lengthwise or not at all if you’re using grape tomatoes. You can also cut regular-sized tomatoes into smaller pieces if you prefer.
  3. Use your thumbs to squeeze out the seeds. Cut the tomatoes in half again.How to make Roasted Tomatoes in the oven before shot
  4. Drizzle the tomatoes with oil and then sprinkle with salt, pepper, and Italian seasoning blend.

How Long Does it Take To Roast Tomatoes in the Oven? 

How long it takes to roast tomatoes in the oven depends on how much time you have. The longer you roast them the more they get that lovely caramelized color and intensified flavor. Slow roasting is nice, but if you’re in a hurry, you can crank up the heat and make the whole process faster.

I find the happy medium for best flavor without taking too long to be roasting them at 375 degrees F for 45 minutes.

How do I store leftovers? 

If you have leftover tomatoes, you can store them in an airtight container in the refrigerator. They will last for 4-5 days.

Can I freeze roasted tomatoes? 

I have not tried freezing these (I always eat them up so quickly!) but you should be able to freeze them in a freezer bag to preserve them for a few months.

One of my favorite things is eating these roasted tomatoes alone, straight from a bowl. There are so many ways you can use them, though, so let me share some ideas for your roasted tomatoes! Keep in mind that you can use bigger or smaller tomatoes for roasting. I’ve roasted almost every kind of tomato from roma to plum to grape to heirloom!

  • A great way to make a delicious dinner is to toss your roasted tomatoes with pasta.
  • Use them the same way you would use regular tomatoes to make homemade pasta sauce (extra flavor from roasting!).
  • Add them to a green salad.
  • Add your roasted tomatoes on top of a grilled chicken breast. (They would pair well with chicken made with this Healthy Chicken Marinade.)
  • Use them to make Roasted Tomato Soup.
  • Use them as a topping for pizza, flatbread, or bruschetta.
  • Add a grain and some greens for a delicious vegetable grain bowl
  • Allow them to cool to room temperature, drizzle them with balsamic vinegar, mix with fresh mozzarella and some fresh basil for a spin on caprese salad!
  • Serve them as is for a delicious side dish for all your summer dinners!
