The creamy goat cheese, crunchy walnuts, and soft beets is an unbeatable combination. Not only is the flavor mouth-watering, it’s such a nutrient-dense dish. Beets are a food that helps your body’s natural detoxification process, and this salad is filled with vitamins, minerals, and antioxidants.

Recipe Ingredients: What You Need

Beets

The star of this dish!  Beets are loaded with potassium, vitamin A, iron, antioxidants, and other nutrients. They are known to help improve heart health, fight inflammation, and help keep your blood sugar in check.

Avocado Oil

Avocado oil is a great way to increase your healthy fat intake. It’s rich in vitamin e, and helps the body absorb other fat-soluble vitamins. It’s a great oil to use for roasting the beets.

Salt and Black Pepper

Just a little bit of salt and pepper adds the perfect amount of flavor. You can add however much you’d like! Let your taste buds be your guide.

Extra Virgin Olive Oil

I love using olive oil when making vinaigrettes. It has great flavor when combined with the other ingredients. Olive oil is also full of antioxidants and anti-inflammatory properties.

Lemon Juice

The citrus flavor from the lemon juice is delicious in this roasted beet salad. Lemon juice contains lots of vitamin c, and is great for digestive health.

Dijon Mustard

Dijon mustard has a little bit of a spicy, tangy, and sharp flavor that tastes delicious in this recipe. It’s rich in protein, fiber, vitamin c, and vitamin b.

Honey

Just a little bit of honey adds the perfect amount of sweetness to the salad dressing. It’s rich in antioxidants, can improve heart health, and is way better for blood sugar levels than regular sugar.

Mixed Greens

You can use whatever kind of mixed greens you like. I like to use a blend of different lettuces, baby spinach, and peppery arugula.

Goat Cheese

The creamy goat cheese combined with the roasted beets is a mouth-watering combination. It’s also rich in probiotics which are great for promoting digestive health, reducing inflammation, and boosting immunity. I use crumbled goat cheese.

Walnuts

The crunchy walnuts combine so well with the creamy goat cheese and soft beets. They add healthy fats, fiber, vitamins, and minerals to this dish.

How to Make this Delicious Beet Salad with Goat Cheese

  1. Preheat the oven to 400 degrees.brushing oil on a raw beet
  2. Trim, scrub, and dry your fresh beets (a paper towel works great). Brush each beet with avocado oil and sprinkle with salt to taste. Individually wrap the beets in aluminum foil and place them in a single layer on a rimmed baking sheet.sprinkling salt on raw beet
  3. Roast the beets in the oven for 60-70 minutes, until they are soft. I like to open a foil packet and use a sharp knife to see if they’re soft before I take them out of the oven.  Allow them to cool until they are at room temperature, then peel and cut them into bite-sized pieces (inch cubes).three tin foil balls on a rimmed baking sheet
  4. Meanwhile, whisk together the olive oil, lemon juice, mustard, and honey in a small bowl. Place the greens in a large bowl, drizzle with the dressing, season with salt and pepper, and toss to coat.tossing the greens in a bowl
  5. Top the greens with the beets, goat cheese, and almonds. Optional: top the salad with an additional drizzle of honey. Serve and enjoy!

What kind of beets should I use?

Golden beets, red beets, or even a combination of the two would be equally delicious. Red beets have a slightly stronger taste, and add a beautiful pop of color. Golden beets are a tad sweeter which is why a lot of people eat them with balsamic vinegar but both kinds are equally nutritious. I personally love the stunning color of red beets, but the choice is yours.

Can I substitute the honey for a different sweetener?

While I think honey works best in this recipe, you could try substituting it for maple syrup, agave nectar, or even just regular sugar. Just keep in mind, the flavor will be a little bit different.

Is this beet and goat cheese salad a main dish?

It can be whatever you want! If you’re enjoying it as a side dish (which would be delicious paired with my Veggie Sandwich), the serving size will just differ than if you serve it as a main dish.

How should I store leftovers?

This salad is best served right away, but you can definitely make it ahead if you have a busy schedule. I would recommend storing your beets, goat cheese, mixed greens, and dressing separately, and just combine them all when you’re ready to eat it. This will help keep the salad from becoming soggy. I recommend storing your roasted beets in an airtight container and the dressing in a mason jar.
