This simple salad is bursting with flavor. Beets are the star of the show, accompanied by fresh greens, creamy goat cheese, and crunchy walnuts.


Ingredients

  • 3 fresh beets (11.5 pounds total)
  • ~1 tablespoon avocado oil
  • salt and pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 5 ounces mixed greens
  • 4 ounces crumbled goat cheese
  • 1/4 cup walnut pieces

Instructions

  1. Preheat the oven to 400 degrees.
  2. Trim, scrub, and dry the beets. Brush each beet with avocado oil and sprinkle with salt. Individually wrap the beets in aluminum foil and place them on a rimmed cookie sheet.
  3. Roast the beets in the oven for 60-70 minutes, until they are soft. Allow them to cool, and then peel them and cut them into bite-sized pieces.
  4. Meanwhile, whisk together the olive oil, lemon juice, mustard, and honey. Place the greens in a large bowl, drizzle with the dressing, season with salt and pepper, and toss to coat.
  5. Top the greens with the beets, goat cheese, and almonds. Optional: top the salad with an additional drizzle of honey. Serve and enjoy!
