I generally think of soup as a winter thing, but there are certain soups that scream spring. Asparagus soup is one of them. Let’s face it, as much as we would love spring to be full of bright, sunny days, sometimes it’s just not.
Sometimes it’s dark, gloomy, and rains all day. These are the days when you want to make a spring soup. It’s warm and comforting during the rainy days, but still light enough to remind you that the seasons are changing and sunny days are right around the corner.
Although I love healthy soups and tend to make them all year, this Asparagus Soup is especially perfect for springtime. You can indulge in the taste of fresh asparagus with this vegan soup recipe. Creamy, nutritious, and perfect for any occasion.
Plant-based soups are a great way to add your favorite vegetables (even the not-so-favorite ones) to your diet. They are loaded with the power of vegetables (antioxidants and vitamins) and can be a real comfort food on those rainy spring days or the perfect weeknight dinner after a long day of work.
Whenever you feel like you aren’t getting enough green food, this vegan asparagus soup can come to the rescue!
Even though this isn’t technically a cream of asparagus soup recipe, the creamy consistency of this delicious soup is everything. Really. You’ll know when you
taste it. If you’re looking for easy vegan soup recipes, this is it! Few ingredients, not so much labor, and a 100% vegan.

Creamy Vegan Asparagus Soup Recipe Ingredients
Asparagus
We will be using two bunches of asparagus for this recipe. We will use every bit of this crunchy, green veggie – from asparagus tips to the stems. No food waste here. Asparagus brings so much more to the recipe than its bright green color. It’s an excellent source of vitamins A, C, and K. There’s a ton of folate to boost energy and metabolism. I also have to mention it aids in digestion, which means it can boost weight loss.
Vegetable Stock
Next, we will be using 6 cups of vegetable broth. It’s the foundation of this soup, so it needs to be flavorful and comforting.
You can use store-bought vegetable broth with the woody ends of asparagus. Make your own if you want to. It’ll be even healthier and will save you money. You can use yellow onion, celery, and carrots to make your version. Vegetable stock is so good for your body. From the eyes to the bones, every part will thank you for it.
Olive Oil
Olive oil has a nice herbal profile that boosts the flavor here. I add it to all my creamy asparagus soup recipes to enhance the fat content. And no, it’s not unhealthy fats. In fact, olive oil is a great source of polyunsaturated fat, which helps in decreasing LDL cholesterol in the body. The recipe calls for two tablespoons of olive oil. If you’re not a fan or are out of it, vegan butter (even regular butter) are both good substitutions.
White Wine
Asparagus and dry, white wine are divine together! I usually use Chardonnay for this recipe. I love the richness and it’s usually the white wine I keep on hand. You can use your favorite variety of dry white. Don’t worry – the wine won’t overpower the other flavors. Plus, we are only using half a cup.
Spices
I like to add some heat and smokiness to the soup. So, I usually use a pinch (sometimes more) of cayenne pepper. Did you know it’s good for migraines and congestion? It also acts as a pain killer and boosts metabolism. Wow, so much for a tiny pinch! Of course, if you don’t want any heat in this vegan asparagus soup, skip the cayenne pepper.
But salt. You can’t leave the salt out. I use 1 1/4 teaspoons of it. It’s a must to bring out the best in asparagus.
Lemon Juice
What’s a soup without some citrusy zing? I squeeze an entire lemon into the soup just before serving. It makes the soup so fresh. And since we’re talking about benefits, lemon juice helps in reducing inflammation and flushes out toxins. I’m a lover!
How to Make Vegan Asparagus Soup
When you look at the instructions, it might feel like a lot of work. But I promise you, it’s not! Just follow everything to the letter, and you’ll have a bowl of hot soup with the creamiest texture in no time.
- Start by washing your asparagus thoroughly. Pat dry and chop the woody ends.
- Use the ends in your vegetable stock. Put everything in a large pot and bring it to a boil. Give it time to simmer on low heat.
- In another pot, heat oil on medium heat. Cook your leftover asparagus for ten minutes before adding white wine. Cook them both together till the wine cooks off.
- Add your vegetable stock (minus the woody ends) to your cooked asparagus. Add your spices and cook some more.
- Blend soup in a high-speed blender till you get the creamiest texture. You can use an immersion blender, too.
- Squeeze your lemon on top and stir to combine. Enjoy!
Vegan Asparagus Soup Tips
- Always buy asparagus with tightly closed tips and firm stalks.
- Cook your asparagus right before blending it. If you blend cooked asparagus, it will lose its bright green color and turn into a brownish hue.
- You can store asparagus in ice-cold water if you’re not making the soup right away.
- For an even creamier texture, stir in a touch of full-fat coconut milk with the lemon juice.

Description
When asparagus is fresh and in season, that’s the perfect time to make this healthy and flavorful soup!
Ingredients
- 2 bunches asparagus (~2 pounds)
- 2 tablespoons olive oil or vegan butter*
- 1/2 cup white wine
- 6 cups vegetable stock
- 1 1/4 teaspoon salt
- pinch of cayenne pepper, or to taste
- juice from one lemon
Instructions
- Cut the woody ends from your asparagus.
- Put the ends you cut, along with the vegetable stock, into a large pot. Bring to a boil, then lower the heat and allow to simmer.
- Cut the rest of your asparagus into 1 inch pieces. You can reserve a few of the attractive ends for garnish, if desired.
- Heat the oil in a separate pot over medium low to medium-low heat. Add the cut asparagus, cover, and allow to cook for about 10 minutes. Increase the heat to medium to medium-high and add 1/4 cup wine. Allow to cook, uncovered, stirring occasionally, until the wine cooks off, about 5-7 minutes. Add the remaining 1/4 cup of wine and cook another 5-7 minutes, until the wine cooks off.
- Remove the woody ends from the stock and discard. Transfer the stock to the pot with the asparagus. Add the salt and cayenne, bring to a boil, and then reduce the heat and simmer about 10 more minutes, until the asparagus is nice and tender.
- Transfer the soup, in batches, to a blender and blend until smooth. Once the soup is blended and back in the pot, add the juice from your lemon. Enjoy!
