I could easily change the name of this blog to Sweet Potatoes: A Love Story. It would be a love story with a bit of tragedy. Why?

Sweet potatoes are my true food love. A more perfect food I’ve yet to find. Yet. My family doesn’t share the love. That makes me and sweet potato a sort of star-crossed lovers. I have to be careful when I express my love.

I can get my family to eat sweet potato chips, sweet potato pancakes, and sweet potato muffins. Get the theme? They have to be in crispy chip form or baked into something.

But that’s okay. That just means there’s more stuffed sweet potatoes or Sweet Potato Fritters for me.

These Sweet Potato Fritters are crispy on the outside, soft on the inside, and insanely flavorful. They pair perfectly with the avocado dipping sauce. It’s spiked with fresh basil, which complements the Sweet Potato Fritters really well. Sweet Potato Fritters recipe with avocado dipping sauce

Ingredients

Scale

For the Fritters 

  • 1 medium sweet potato, peeled and grated (2 cups grated)
  • 2 eggs
  • 1/2 cup Panko bread crumbs
  • 1/4 cup flour*
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 2 teaspoons dried oregano
  • 1/2 teaspoon garlic salt
  • oil of choice

For the Avocado Dipping Sauce

  • 1/2 large avocado
  • 1/4 cup nonfat plain Greek yogurt
  • 10 basil leaves, roughly chopped

 

Instructions

For the Fritters 

  1. In a medium bowl, mix together all ingredients, except oil, until well combined.
  2. Form the mixture into 2-inch patties. You will have 8 total patties.
  3. In a large skillet, heat a thin layer of oil over medium heat. When the oil shimmers, add the fritters to the skillet.
  4. Cook the skillet until they are golden brown, 3-4 minutes per side.
  5. Serve with Avocado Dipping Sauce

For the Avocado Dipping Sauce

  1. Place the avocado, yogurt, basil, and salt in a blender.
  2. Blend on medium low until thoroughly combined and smooth.
  3. Serve with Sweet Potato Fritters.
