Healthy Samoa Cookies (Easy no bake recipe!)

Description

Vegan, gluten free, and no bake, these Healthy Samoa Cookies are a big improvement from the kind you get from a box!


Ingredients

Units Scale
  • 1/3 cup coconut sugar
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1/2 cup unsweetened almond milk
  • 1/4 teaspoon salt
  • 1/2 cup natural almond butter
  • 1 teaspoon vanilla extract
  • 1 cup finely shredded unsweetened coconut
  • 1 cup old fashioned rolled oats
  • 1 cup stevia-sweetened dark chocolate chips

Instructions

  1. Line a baking sheet with parchment paper, wax paper, or a silicone baking mat.
  2. In a medium saucepan, whisk together the coconut sugar, maple syrup, coconut oil, salt,
    and almond butter to a simmer. Bring to a simmer and allow to simmer for one minute,
    whisking constantly.
  3. Remove from the heat and add the vanilla, shredded coconut, and rolled oats and stir until
    well combined.
  4. Use a cookie scoop to drop the mixture onto the prepared cookie sheet. Use your finger or
    thumb to create a small hole in the middle and then slightly flatten the cookie. Repeat until
    you’ve used all the mixture.
  5. Place the tray in the freezer to allow the cookies to set, about 30 minutes.
  6. Meanwhile, melt the chocolate chips using a double broiler or the microwave.
  7. Dip each cookie into the melted chocolate so the bottom half gets a coating of the
    chocolate. Place it, chocolate side down, back on the tray. Repeat with all the cookies.
  8.  Use a spoon to drizzle the remaining melted chocolate on top of the cookies. Return the
    tray to the freezer to allow the chocolate to set, 10 minutes or so.
  9. Store these cookies in an airtight container in the refrigerator. Enjoy!
