Vegan, gluten free, and no bake, these Healthy Samoa Cookies are a big improvement from the kind you get from a box!

- 1/3 cup coconut sugar
- 1/3 cup coconut oil
- 1/3 cup maple syrup
- 1/2 cup unsweetened almond milk
- 1/4 teaspoon salt
- 1/2 cup natural almond butter
- 1 teaspoon vanilla extract
- 1 cup finely shredded unsweetened coconut
- 1 cup old fashioned rolled oats
- 1 cup stevia-sweetened dark chocolate chips
Instructions
- Line a baking sheet with parchment paper, wax paper, or a silicone baking mat.
- In a medium saucepan, whisk together the coconut sugar, maple syrup, coconut oil, salt,
and almond butter to a simmer. Bring to a simmer and allow to simmer for one minute,
whisking constantly. - Remove from the heat and add the vanilla, shredded coconut, and rolled oats and stir until
well combined. - Use a cookie scoop to drop the mixture onto the prepared cookie sheet. Use your finger or
thumb to create a small hole in the middle and then slightly flatten the cookie. Repeat until
you’ve used all the mixture. - Place the tray in the freezer to allow the cookies to set, about 30 minutes.
- Meanwhile, melt the chocolate chips using a double broiler or the microwave.
- Dip each cookie into the melted chocolate so the bottom half gets a coating of the
chocolate. Place it, chocolate side down, back on the tray. Repeat with all the cookies. - Use a spoon to drizzle the remaining melted chocolate on top of the cookies. Return the
tray to the freezer to allow the chocolate to set, 10 minutes or so. - Store these cookies in an airtight container in the refrigerator. Enjoy!
