Sometimes you just need a quick side dish to round out a meal. Or, sometimes, you realize your kids haven’t eaten anything green in days and your only other option is to serve a green smoothie with dinner. This recipe is for those days. It’s a simple recipe for sure. So simple, in fact, I’m almost embarrassed to post it. But it’s the recipe that turned Luke into a broccoli lover. It’s the recipe that I’ve made countless times over the last 18 months.
Luke’s Favorite Broccoli
1 bunch broccoli, trimmed and cut into bite-sized pieces
3 tablespoons olive oil or avocado oil
2-3 tablespoons fresh lemon juice
1/2 teaspoon coarse salt
Heat the oil in a large skillet. Add the broccoli and sauté until bright green, about 2-3 minutes. Add the lemon juice and salt and sauté until just tender, another 2-3 minutes. Serve immediately. Enjoy!
