Our vegan Easter dinner that included Vegetable Wellington that was made with carrots, leaks, and garlic and a white bean puree

and asparagus roasted with olive oil, garlic, lemon juice, salt and pepper, and finished with lemon zest, along with an unpictured spinach-strawberry salad with poppyseed dressing

    Meghan is just getting so big!! Your Easter dinner looks delicious. I love the braid around the wellington – great touch to make it super special!

    Love the pictures! We didn’t dye eggs this year – somehow time got away from me.

    You guys looked fantastic on Easter. What a beautiful family! Beautiful Easter lunch too – recipe for the Vegetable Wellington please!! After you recover from Easter that is. So, maybe July? 🙂

    Oh my word, your Easter dinner sounds divine! Would love to have that recipe. Ours was a zucchini (tofu) frittata from fatfreevegan.com, asparagus, pineapple, homemade blueberry oatmeal donuts, and strawberry pie. It was so good! I highly recommend the frittata….it had an amazing flavor. Happy Easter!

      Yummy! What is your recipe for the blueberry oatmeal donuts. I have been trying to find a healthy recipe for donuts to use in my donut pan!
