Easter in our part of the world…
Egg hunting
Egg coloring
More egg searching on Easter morning
Testing it outside
With Nana and Poppy
Our vegan Easter dinner that included Vegetable Wellington that was made with carrots, leaks, and garlic and a white bean puree
and asparagus roasted with olive oil, garlic, lemon juice, salt and pepper, and finished with lemon zest, along with an unpictured spinach-strawberry salad with poppyseed dressing
Happy Easter, from my family to yours

Meghan is just getting so big!! Your Easter dinner looks delicious. I love the braid around the wellington – great touch to make it super special!

Isn’t she such a big girl now? It’s crazy! Thanks–the wellington was so good. My meat-eating husband and father in law did not complain!

Love the pictures! We didn’t dye eggs this year – somehow time got away from me.
You guys looked fantastic on Easter. What a beautiful family! Beautiful Easter lunch too – recipe for the Vegetable Wellington please!! After you recover from Easter that is. So, maybe July? 🙂
Maryea says
I will definitely share the recipe. I can’t make any promises that it will be before July, though. 😉

Oh my word, your Easter dinner sounds divine! Would love to have that recipe. Ours was a zucchini (tofu) frittata from fatfreevegan.com, asparagus, pineapple, homemade blueberry oatmeal donuts, and strawberry pie. It was so good! I highly recommend the frittata….it had an amazing flavor. Happy Easter!
Jennifer says
Yummy! What is your recipe for the blueberry oatmeal donuts. I have been trying to find a healthy recipe for donuts to use in my donut pan!
Lisa says
Jennifer,
Here is the recipe I used for the blueberry oatmeal donuts:

It worked perfectly in my donut pan. Hopefully, you’ll have good luck with it, too.
