Vegan Coconut Cookies

Meghan’s got a serious sweet tooth lately.  She’s always asking for cookies or chocolate pudding.  I’m glad that her sweet cravings are not like her dad’s, which usually involve either a tub of Grater’s ice cream or a dozen Amish chocolate chip cookies.  But this means that I have to be on my toes, having healthy sweets ready for her.  This cookie recipe was a result of me being out of her favorite sweet-potato avocado chocolate pudding and not having the right ingredients on hand to make her some for her after-dinner treat.  These cookies are made without flour and get most of their sweetness from dried dates and prunes.  My in-laws were having dinner with us, and I served the plate full after dinner and every cookie was gone within 5 minutes.  They are reminiscent of the Samoa Girl Scout cookies, but without the chocolate.  Remember those?  Well, these aren’t quite those, but these are much healthier.

Description

A tasty, healthy and vegan cookie recipe


Ingredients

Scale
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup old-fashioned oats
  • 1 tsp. baking powder
  • 1/4 cup organic Sucanat
  • 1/2 cup pitted dates
  • 1/2 cup dried pitted plums (prunes)
  • 1 tsp. vanilla
  • 1 tablespoon coconut oil (melted)
  • 1/4 cup soy milk (regular milk would probably due just fine if that’s how you roll)

Instructions

  1. Preheat the oven to 350 degrees.  Line a baking sheet with parchment paper (or lightly oil).
  2. In a medium bowl, mix together the oats, shredded coconut, baking powder, and Sucanat.  Set aside.  In a food processor (or blender), process the dates and prunes until they are chopped well, but not totally sticking together.  Add the dates and prunes along with the vanilla, oil, and soy milk to the dry ingredients.  Mix until everything is well incorporated.  I had to stir for a good few minutes.  Use your fingers to shape the mixture into 1 1/2 inch circles and place on the baking sheet.  Bake in the preheated oven for 10-12 minutes.

    I made these today – delicious! I had them in the oven for about 18 min and they STILL aren’t hardening up. They fall apart when I pick them up. Any thoughts?

      That’s strange; I haven’t had that problem at all. How much did you process the dates and prunes? Maybe you needed to process them a little more? Did you use dried prunes or did you use the kind that come stored in juice? That could make the mixture too wet. Or maybe you cooked them too long? I might have to make these this week and experiment with what could cause them to fall apart. I’ll let you know if I figure it out.

    Maryea, We absolutely love these cookies! A little too much, I’m afraid. I made them for our trip to see family tomorrow and they were all gone in a few hours. So now, I’m remaking them again.     I guess it’s an Amish recipe? I don’t know exactly-that’s the name of the chocolate chip cookies at our local bakery that Tim is in love with. 🙂 He buys them by the dozen and is the only one who eats them.
