A tasty, healthy and vegan cookie recipe

- 1/2 cup unsweetened shredded coconut
- 1/2 cup old-fashioned oats
- 1 tsp. baking powder
- 1/4 cup organic Sucanat
- 1/2 cup pitted dates
- 1/2 cup dried pitted plums (prunes)
- 1 tsp. vanilla
- 1 tablespoon coconut oil (melted)
- 1/4 cup soy milk (regular milk would probably due just fine if that’s how you roll)
Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper (or lightly oil).
- In a medium bowl, mix together the oats, shredded coconut, baking powder, and Sucanat. Set aside. In a food processor (or blender), process the dates and prunes until they are chopped well, but not totally sticking together. Add the dates and prunes along with the vanilla, oil, and soy milk to the dry ingredients. Mix until everything is well incorporated. I had to stir for a good few minutes. Use your fingers to shape the mixture into 1 1/2 inch circles and place on the baking sheet. Bake in the preheated oven for 10-12 minutes.
