I’m short on time today so I won’t even try to get my tired brain to come up with a clever introduction to this recipe. I’ll just tell you that it’s one of the tastiest quick dinners I’ve ever made. When a dinner can be ready in less than 30 minutes and delivers big on flavor, it’s a winner in my book.

Description
A delicious and nutritious main meal
Ingredients
- 12 ounces spaghetti or linguine (I used whole grain)
- 1 tablespoon coconut oil or olive oil
- 1 red bell pepper, cut into strips
- 1 cup shelled edamame (I used frozen-no need to defrost)
for the sauce
- 1/3 cup reduced sodium tamari or soy sauce
- 3 cloves garlic, minced
- 1 tablespoon peanut butter
- 3 tablespoons honey
- 3 tablespoons rice vinegar
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon sesame oil
Instructions
In a small bowl, whisk together all the ingredients for the sauce. Set aside.
Prepare the pasta according to package instructions. In a large skillet, heat the oil. Add the red pepper strips and saute until they are soft to your desired doneness (I like mine crisp tender), about 8 minutes. Add the edamame and cook until they are heated through, 3 minutes or so. Stir in the pasta; remove from heat. Pour the sauce over the whole thing and toss to coat. Serve immediately.

I always add napa cabbage to this recipe to bulk it up a bit and sprinkle toasted sesame seeds on top for presentation.
Perfect! I love the idea of adding napa cabbage.
My 14 year old daughter made this for dinner tonight. Excellent easy summer meal. We added slaw and kale salad topped with cranberries and sunflower seeds.

Made this tonight and we really enjoyed it! For our tastes I added stir fry organic beef and a tbsp sugar and and extra tbsp peanut butter to the sauce 🙂 Thanks for the great recipe!

I’m allergic to soy–is there anything I could use in place of soy sauce for a similar taste??

I agree! I was out of sesame seeds this time, but I love having some toasted seeds sprinkled on top.
I think it’s totally weird that I was just wondering what to do with the edamame in my freezer because I want some but didn’t have any exciting ideas for it. Love this! Especially the peanut butter and sesame oil in the sauce – yum! Plus I have a red pepper that needs to be used! How perfect! This is either dinner tonight or lunch tomorrow 🙂
Just wanted to let you know I made this the other day. Delicious! I added a little cornstarch to the sauce and cooked it until it thickened so it stuck to the noodles a little. I also used about half the noodles and added some coleslaw mix to make up the difference. I’ll be making this over and over again, even my daughter loved it 😀
