You only need a few simple ingredients and a trusty skillet to put together this rice skillet recipe—no long list of ingredients, fewer dishes to do. If this sounds like an easy meal you’d want to put together on busy weeknights, here’s what you need:

White rice: Hearty base for the dish. If you want to use brown rice for this, you’ll need to precook it some or the timing will be off.

Chicken stock, beef stock, or water: For moisture and mild flavor. I prefer beef stock here but any of these will work.

Avocado oil: Ideal for sautéing.

Onion, diced: For sweet, savory notes. Onion also provides fiber, vitamin C, and potassium.

How to Make a Mexican Beef Rice Skillet

- In a large skillet with high sides, heat 1 tablespoon avocado oil until hot. Add the onion and bell pepper and sauté until softened, about 5 minutes. Add in the ground beef and sauté until browned, 5 more minutes.
- To the same skillet, add the beans, corn, rice, 1/4 cup taco seasoning, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Stir to combine, and cover the skillet for 15 minutes with the heat on medium low.
- Remove the cover and stir in 1 cup shredded Mexican cheese blend. Serve immediately.

Ingredients
- 1 1/2 cups rice
- 3 cups chicken stock, beef stock, or water
- 1 tablespoon avocado oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 pounds ground beef
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can whole corn kernels, drained
- 1/4 cup taco seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup shredded Mexican cheese blend
- Optional: fresh cilantro for topping
Instructions
- In a large skillet* with high sides, heat 1 tablespoon avocado oil until hot. Add the onion and bell pepper and sauté until softened, about 5 minutes. Add in the ground beef and sauté until browned, 5 more minutes.
