This Brioche French toast casserole makes special breakfasts feel a lot easier. You can prep it in about five minutes the night before and store it, covered, in the refrigerator overnight.
By the next morning, it’s ready to bake in a preheated oven until it turns golden brown. My whole family loves this decadent breakfast because it is truly an elevated breakfast and gives us enough time to relax on those occasions that call for this type of breakfast.
It’s finished with a delicious cream cheese glaze–if French Toast and your favorite cinnamon rolls had a baby, it would be this overnight Brioche French Toast Casserole!
I like to serve it warm exactly as the recipe states, but you can also try it with fresh blueberries, a drizzle of maple syrup, and even extra melted butter for that sweet flavor. It fits right in on special occasions like Easter morning or any busy holiday morning when no one wants extra stress. Let’s make it.
Recipe Ingredients–What You Need
You need the basic ingredients you use in a standard French toast recipe for this overnight breakfast casserole. Here’s what goes into this hearty breakfast casserole dish:
For the Brioche French Toast Casserole
-
Stale Brioche bread, cut into 1-inch cubes: Use stale or a day-old bread because it soaks the milk and egg mixture better than fresh bread slices.
-
Large eggs: Eggs are a French toast staple! They bind the ingredients and give the casserole an airy texture.
-
Whole milk: I use whole milk, but you can also use non-dairy milk alternatives like oat milk or almond milk (homemade helps avoid unwanted additives). You can also use a touch of heavy cream with your milk for an even richer casserole.
-
Vanilla extract: It infuses an aromatic essence.
-
Coconut sugar: A healthier alternative to brown sugar that adds a caramelized sweetness without overpowering. Coconut sugar is still sugar, but it does have more minerals than refined sugar and a slightly lower glycemic index.
-
Ground cinnamon: This adds a warming touch as well as anti-inflammatory and blood-sugar stabilizing properties.
-
Ground cloves: Ground cloves are another warming spice that adds depth of flavor.
-
Freshly grated nutmeg: To make the warming spice trifecta complete!
-
Pinch of salt: To elevate all the flavors.
For the Cream Cheese Glaze Topping
-
Cream cheese (at room temperature): Cream cheese gives irresistible flavor to the glaze topping.
-
Butter (at room temperature): For maximum nutrition, I recommend butter from pasture-raised cows.
-
Powdered sugar or powdered swerve (erythritol-based sweetener): You can use regular powdered sugar, or lower the overall sugar content by using an erythritol-based powdered sugar.
-
Vanilla: For flavor
-
Milk, if needed: Thins the glaze to the perfect drizzling consistency.
How to Make the Best Overnight Brioche French Toast Casserole
Got the ingredients handy? Let’s make this easy French toast casserole recipe. Here’s how you whip up a whole batch of delicious breakfast to make weekend mornings less work. Note: If your bread isn’t stale, leave it uncovered on the counter for 4 or more hours before making this.
- Butter a large casserole (3 or 4 quart will work) dish very well.
- Place the bread cubes in the baking dish.
- In a medium bowl or large liquid measuring cup, whisk together the eggs, milk, vanilla, sugar, cinnamon, cloves, nutmeg, and salt. Pour the mixture over the bread.
- Cover the casserole dish tightly with aluminum foil and refrigerate overnight.
- Prepare cream cheese glaze: (this can be done the night before or in the morning while the casserole bakes) Beat together the cream cheese and butter (must be at room temperature) until they are a smooth, creamy mixture.
- Sift the powered sugar into a bowl.
- Next, mix the powdered sugar into the cream cheese mixture. Add the vanilla and a pinch of salt. If the glaze is too thick for your liking, add a tablespoon of milk at a time until it is your desired consistency. This may stay at room temperature for up to 8 hours if you’re using regular powdered sugar.
- When ready to bake, take the casserole out of the fridge to sit at room temperature while the oven preheats. Preheat the oven to 350 degrees.
- Keeping the foil on the casserole dish, bake covered for 20 minutes. Remove the foil and bake another 30 minutes, or until the French toast is set.
- Allow it to cool for a few minutes and then drizzle with the cream cheese glaze and serve. Enjoy!
