Hold on to your hats, boys and girls.  Anyone who loves pumpkin pie is going to swoon over this dip.  I know I just posted a pumpkin pie-ish recipe last week, but clearly I can’t get enough of the flavor.

When I posted the recipe for my Sweet White Bean Apple Dip, one of my readers (Hi, Mari Jo!) mentioned that it would be good with pumpkin puree.  I knew it was only a matter of time before I gave it a try.  How right she was.

I had some girlfriends coming over this weekend, so it was the perfect time to give the white bean+pumpkin idea a whirl.  As a pumpkin pie lover, I am super excited about the results. This dip seriously tastes like pumpkin pie in a dip form.

Everyone who tried it was so surprised to hear that the base was white beans.  They would have never know had I not told them.  Don’t feel guilty if you make this and decide to keep the beans a secret.  I won’t tell.

Besides the incredible taste, I’m also happy to have another snack option with a good protein punch.  It’s great for me as a pregnant mama with extra demands for protein.  It’s also good for Meghan, who, in typical 3-year-old fashion, has one favorite source of protein:  peanut butter.  Other than that, you never know if she’s going to eat her other protein options in a given day.  Make the option sweet like this dip, she’s much more likely to eat up.  Win win.

Description

A sweet and spicy dip loaded with protein thanks to the white beans (that you can’t taste!), this is perfect with apples, graham crackers, or even as an oatmeal topping.


Ingredients

Scale
  • 1 1/2 cups cooked white beans, or 1 (15 ounce) can, rinsed and drained
  • 1 cup pumpkin puree (plain, not the pumpkin pie mix)
  • 3 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. In a food processor, process the beans until they are almost smooth.  Add the other ingredients and continue to process until you have a smooth texture.  (If you don’t have a food processor, go ahead and use your blender to make this)  Enjoy!
