Description

Vegan pumpkin spice ice cream. Make it in just 5 minutes!


Ingredients

  • 2 frozen bananas, broken into chunks
  • 2/3 cup canned pumpkin puree (plain, not pumpkin pie flavored)
  • 23 tablespoons maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1/2 scant teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • pinch of ground cloves
  • pinch of ground nutmeg
  • pinch of salt

Instructions

  1. Put all ingredients (start with 2 tablespoons maple syrup) in a food processor and process until smooth and the consistency of soft serve ice cream.  Taste and add an extra tablespoon of maple syrup if you think it needs to be sweeter.
  2. Serve immediately as it will melt quickly.
