Scale
- 1/2 cup Greek yogurt
- 1/2 cup whole milk
- 4 slices sourdough bread, crusts removed and torn into pieces
- 2 pounds ground turkey
- 1/2 cup grated parmesan cheese
- 1 tablespoon dried parsley
- 2 large egg yolks
- 2 garlic cloves, minced
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper
- avocado oil
Instructions
- In a medium bowl, combine the Greek yogurt and milk. Add the bread pieces and mash them together. Let this mixture stand for 10 minutes.
- Mix in the 2 pounds of ground turkey, 1/2 cup grated parmesan cheese, 1 tablespoon dried parsley, 2 large egg yolks, 2 garlic cloves, 1 1/2 teaspoons salt, and 1/4 teaspoon black pepper with your hands.
- Pinch off and roll mixture into 1 1/2 inch balls (about 24 meatballs total).
- Add oil to a large 12-inch skillet so it measures about 1/4 inch deep. Heat oil over medium high heat until it’s shimmering. Add half of the meatballs to the skillet (unless you have a very large skillet that fits them all) and cook until browned on all sides, about 10 minutes total. Remove the meatballs with a slotted spoon and transfer to a towel-lined plate. Cook the second batch of meatballs in the same way. Serve and enjoy!
