Strawberry Protein Balls

Description

A creamy strawberry center is surrounded by delicious white chocolate for a perfect snack or healthy dessert bite.


Ingredients

  • 1 (2 ounce) package freeze dried strawberries
  • 2 cups cottage cheese
  • 3/4 cup vanilla bean protein powder
  • 1 cup stevia-sweetened white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Place the freeze dried strawberries in the food processor and process until they are a fine crumb.
  2. Add the cottage cheese and protein powder and process until smooth.
  3. Spray a cookie scoop with cooking oil, then scoop the mixture and place it on a baking sheet lined with parchment paper or a silicone baking mat. Place it in the freezer to firm at least 30 minutes.
  4. Meanwhile, melt the white chocolate chips with the coconut oil using a double boiler on the
    stove or in 15 second increments in the microwave.
  5. Use a fork to dip the strawberry ball in the white chocolate mixture, allowing the excess to
    drip off. Place the dipped balls back on the baking tray. Repeat with each ball and then
    place the balls in the fridge until the chocolate is firm. Store in the refrigerator in an airtight
    container. Enjoy!

Notes

  1. Recommended protein powder: Just Ingredients Vanilla Bean Protein Powder
  2. The protein powder you use will influence the final results of this recipe. I have only tested it with the one protein powder linked above.
  3. For best results, make sure to thoroughly freeze the strawberry bites before you dip them in the melted white chocolate chips. If they aren’t thoroughly frozen the warm chips may cause the bites to melt some while dipping.
