Description

This Lemon Poppyseed Baked Oatmeal is lightly sweet, creamy, and a warm and comforting healthy breakfast!


Ingredients

  • 3 cups old fashioned rolled oats
  • 3 large eggs
  • 2 cups unsweetened vanilla almond milk
  • 1/4 cup honey
  • 1/4 cup fresh Meyer lemon juice
  • 1 teaspoon Meyer lemon zest
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon poppy seeds

Instructions

  1. Preheat the oven to 350 degrees. Lightly grease a medium baking dish and set aside.
  2. In a medium bowl, mix together all of the ingredients until well combined. Transfer the oatmeal to the prepared baking dish.
  3. Bake, uncovered, in the preheated oven for 20-25 minutes. Enjoy!
