Ingredients
Scale
- 1 1/2 cups jasmine rice
- 1 1/2 tablespoons avocado oil
- 3 tablespoons peeled and finely chopped ginger
- 1 tablespoon minced garlic
- 2 1/4 cups reduced sodium chicken or vegetable stock
- 1/2 teaspoon salt
- 1/2 to 3/4 cup chopped cilantro leaves and stems
Instructions
- Place the rice in a fine mesh strainer and rinse it until the water runs clear. Shake it to drain the rice well.
- Heat the oil in a large pot over medium high heat and add the ginger and garlic. Cook for 30 seconds, stirring the whole time, and then add the rice and stir another 2 minutes.
- Add the stock and salt and bring to a boil. Reduce the heat to bring to a gentle simmer, then cover and cook until the rice is tender, about 15-18 minutes.
- Remove from heat and keep covered for 10 minutes. Add the cilantro to the top of the rice, then use a large fork to fluff the rice while combining it with the cilantro. Serve and enjoy!
