Easy Taco Casserole Recipe (and healthy!)

Description

This easy Taco Casserole incorporates layers of ground beef with veggies, cheese, and tortillas.


Ingredients

  • 1 pound grass-fed ground beef
  • 1 cup finely chopped onion
  • 1 small red bell pepper, finely chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1/4 cup taco seasoning (I use this homemade taco seasoning)
  • 56 corn small corn tortillas
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: cilantro, green onion, avocado, jalapeƱo peppers, sour cream

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large skillet over medium-high heat, add the onions, peppers, and ground beef.
  3. Cook the vegetables and beef until the beef is browned and the vegetables softened.
  4. Drain any excess grease from the pan.
  5. Add the can of crushed tomatoes and taco seasoning mix and stir to combine. Bring to a simmer and allow to simmer for 10 minutes. The liquid should evaporate some and make a thicker mixture.
  6. Meanwhile, cut your tortillas into strips*
  7. In a square casserole dish, spread 1/3 of the ground beef mixture to the bottom of the dish. Top with 1/3 of the shredded cheese. Finally, cover the beef and cheese with tortilla strips for a tortilla layer.
  8. Repeat this process, ending with a final layer of beef and cheese on top.
  9. Bake in the preheated oven for 30 minutes. Allow to rest for 10 minutes, then add any favorite taco toppings, then slice and serve.

Notes

*The first time I tested this recipe I used all 8 tortillas from the package and didn’t cut them into strips, but overlapped them in the layer. My family much preferred less tortillas and having them cut into strips so there was no overlapping.

*Please note that the prep time includes the 10 minutes of resting time after you take the casserole out of the oven.
