- 1 large or 2 smaller cucumbers, medium diced (seedless cucumbers work best)
- 2 peaches, pitted and medium diced
- juice from 1 lime
- 1 tablespoon chopped chipotle pepper in adobo sauce (affiliate link)*
- 3/4 cup chopped cilantro
- 1/2 teaspoon coarse sea salt
Instructions
- Mix together all ingredients in a medium bowl.
- If time, allow salsa to sit for flavors to develop. Enjoy!
