Description

This caprese-style cottage cheese dip is flavored with fresh basil and tomatoes roasted to bring out their sweetness.


Ingredients

  • 1 pint cherry tomatoes, halved
  • 1 large garlic clove
  • 7 large basil leaves, divided
  • 1 teaspoon olive oil or avocado oil
  • 1/4 teaspoon salt, divided
  • 1/8 teaspoon black pepper, divided
  • 16 ounces cottage cheese
  • 12 tablespoons balsamic glaze

Instructions

  1. Preheat the oven to 375 degrees. Place the tomatoes and whole garlic clove on a rimmed baking sheet. Drizzle with the oil, 1/8 teaspoon salt and 1/16 teaspoon pepper. Toss to coat.
  2. Roast the tomatoes and garlic for 20-30 minutes, until they are browned and caramelized.
  3. Allow the tomatoes and garlic to cool, then place the cottage cheese, garlic, 5 of the basil leaves, and the remaining salt and pepper to a small blender. Blend until smooth and creamy. Do not overblend.
  4. Chiffonade the remaining two basil leaves.
  5. Place the cottage cheese dip in a shallow serving bowl. Distribute the roasted tomatoes to
    the top of the dip. Top the tomatoes with the basil strips and drizzle the balsamic glaze over the entire dish. Serve with vegetables or pita chips. Enjoy!
