Ingredients

  • 1 15-ounce can chickpeas, drained, rinsed, and dried well
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon fresh lime juice
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, mix together the melted coconut oil, lime juice, and salt.  Add the chickpeas and toss to coat.  Place the chickpeas on a baking sheet.  Cook in the preheated oven for 25-35 minutes, until chickpeas are golden and crisp.  Stir the chickpeas several times during the cooking time to ensure even roasting.  Watch carefully so as not to burn as oven temperatures can vary. Enjoy!
