Description
These Coconut Lime Protein Popsicles are refreshing and make a delicious summer treat. They are dairy free and Keto and diabetic friendly.
Ingredients
Scale
- 1 (13.66 ounce) can full-fat coconut milk*
- juice and zest from 1 lime
- 1/4 cup Monk Fruit Sweetener**
- 2 scoops unflavored collagen protein powder***
Instructions
- Place all ingredients into a blender and blend until smooth.
- Transfer the mixture to popsicle molds and place in the freezer until solid.
- To remove from mold, run under water until the popsicle comes loose. Store in the freezer.
Notes
*I have not tried it, but lite coconut milk will probably work.
**You may also try 1/4 cup honey, agave sector, erythritol, or regular sugar.
***Your favorite protein powder may be substituted, I recommend unflavored, unsweetened
