Description

These Christmas Mice are easy to make and are an adorable treat.

Ingredients

Scale
  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • 30 marchiano cherries, pitted and with stems
  • 30 Hershey chocolate kisses
  • 60 almond slices
  • Optional: decorative white icing

Instructions

  1. Drain the cherries and use a towel to dry them well. Set aside.
  2. Place the chocolate chips and coconut oil in a medium glass bowl. Either microwave in 30 second increments until melted, or use a double boiler on the stove to melt the chocolate.
  3. Now it’s time to assemble the mice. Line a baking sheet with parchment paper or wax paper.
  4. Holding the cherry stem, dip a cherry in the melted chocolate, and then press on the bottom of a chocolate kiss. Set this on the tray, then place two almond slices between the cherry and kiss, gently pressing them together to hold it in place. Continue with the rest of the cherries.
  5. If you’d like to add eyes, use white decorative icing to make two dots on the top of the Hershey kiss.
  6. Allow the mice to firm in the refrigerator.
  7. Store in an airtight container either at room temperature or in the refrigerator for longer storage. Can be frozen.
