Description
This Chia Pudding is sweet, flavorful, and nutritious. Serve it parfait-style with chia seed jam and fresh berries!
Ingredients

For the Vanilla Chia Pudding
- 1 cup plain unsweetened almond milk, or milk of choice
- 3 tablespoons chia seeds
- 14 drops liquid stevia, or sweetener of choice
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon vanilla bean paste
- 1 small pinch salt
For Serving
- 1/2 cup Chia Berry Jam, or jam of choice
- 1/2 cup mixed fresh berries, such as blackberries, blueberries, red raspberries, strawberries, etc.
- 2 fresh cherries
Instructions
For the Chia Vanilla Pudding:
- Whisk together all ingredients in a medium bowl.
- Cover and refrigerate until thickened, about 2 hours, whisking occasionally.
To Assemble and Serve:
- Put 3 tablespoons Chia Berry Jam in the bottom of each of 2 8-ounce glasses.
- Divide the chia pudding between the 2 glasses.
- Top each with 1 tablespoon Chia Berry Jam.
- Top with the fresh berries.
- Place a cherry on top of each. Enjoy!
Notes
Blueberry Chia Jam or Raspberry Chia Jam are both great choices for this recipe.
