Description

This Chia Pudding is sweet, flavorful, and nutritious. Serve it parfait-style with chia seed jam and fresh berries!


Ingredients

For the Vanilla Chia Pudding

  • 1 cup plain unsweetened almond milk, or milk of choice
  • 3 tablespoons chia seeds
  • 14 drops liquid stevia, or sweetener of choice
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon vanilla bean paste
  • 1 small pinch salt

For Serving

  • 1/2 cup Chia Berry Jam, or jam of choice
  • 1/2 cup mixed fresh berries, such as blackberries, blueberries, red raspberries, strawberries, etc.
  • 2 fresh cherries

Instructions

For the Chia Vanilla Pudding:

  1. Whisk together all ingredients in a medium bowl.
  2. Cover and refrigerate until thickened, about 2 hours, whisking occasionally.

To Assemble and Serve:

  1. Put 3 tablespoons Chia Berry Jam in the bottom of each of 2 8-ounce glasses.
  2. Divide the chia pudding between the 2 glasses.
  3. Top each with 1 tablespoon Chia Berry Jam.
  4. Top with the fresh berries.
  5. Place a cherry on top of each. Enjoy!

Notes

Blueberry Chia Jam or Raspberry Chia Jam are both great choices for this recipe.
