In a bowl mix together softened cream cheese, shredded cheddar cheese, buffalo sauce, green onion, garlic powder, onion powder, black pepper, and dill weed until well combined (mixture will be very thick). Set aside.
Season chicken breasts liberally with salt and pepper
Using an oven-safe skillet, heat up a little cooking oil on medium high heat.
When the oil is hot sear both sides of the chicken breasts until golden, a few minutes per side. (Do not cook all the way through).
Take the skillet off heat and cover the top of each chicken breast in a thick layer of the cheese mixture.
Put the skillet with the chicken into the preheated oven until the chicken is fully cooked (internal
temperature of 165 degrees). This will take approximately 10-15 minutes, depending on the size of the breasts you’re using.
8. When chicken has come to temp take it out of the oven and let it rest for 5-10 minutes.
9. Garnish with cilantro, parsley, or green onion. Enjoy!
If you want to make this dish a bit spicier add some red pepper flakes to the cheese mixture.
If you want to make this dish less spicy, swap one of the Tablespoons of buffalo sauce for ranch dressing.
For juicier more tender chicken, pound the chicken breasts out slightly so they lay flat, they don’t need to be super thin but the little amount of pounding will give them a nice tender texture.
