For the salad
- 3 cups finely chopped kale
- 2 cups pomegranate arils (from 1 large pomegranate)
- 1 apple, diced
- 1 small cucumber, diced
- 1 (15 ounce) can garbanzo beens
- 4 ounces crumbled goat cheese
- 1/2 cup walnut pieces
- Salt and pepper
For the dressing
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 teaspoon dijon mustard
Instructions
- Place the kale , pomegranate arils, apple, cucumber, and garbanzo beans in a medium bowl. Toss to combine and season with salt and pepper.
- In a small bowl or jar, place the dressing ingredients and top with a lid and shake or whisk until the ingredients are combined. Drizzle the dressing on the salad ingredients and toss again to combine.
- Top with the goat cheese and walnuts and serve. Enjoy!
