This Kale Winter Salad is bursting with flavor, contrasting textures, and is also filled with nutrients.


Ingredients

Units Scale

For the salad

  • 3 cups finely chopped kale
  • 2 cups pomegranate arils (from 1 large pomegranate)
  • 1 apple, diced
  • 1 small cucumber, diced
  • 1 (15 ounce) can garbanzo beens
  • 4 ounces crumbled goat cheese
  • 1/2 cup walnut pieces
  • Salt and pepper

For the dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard

Instructions

  1. Place the kale , pomegranate arils, apple, cucumber, and garbanzo beans in a medium bowl. Toss to combine and season with salt and pepper.
  2. In a small bowl or jar, place the dressing ingredients and top with a lid and shake or whisk until the ingredients are combined. Drizzle the dressing on the salad ingredients and toss again to combine.
  3. Top with the goat cheese and walnuts and serve. Enjoy!
