Description
This Sweet and Salty Chex mix is made with coconut oil and no corn syrup, and nourishing ingredients like dried fruits, nuts, and seeds!

- 9 cups Rice Chex cereal
- 1 cup whole almonds
- 2 cups gluten-free pretzels
- 1/2 cup coconut oil*
- 1/4 cup honey
- 1/4 cup coconut sugar
- 1 teaspoon cinnamon
- pinch salt
- 2 cups coconut chips
- 2 cups Superberry Superfuel Blend **
- 1 cup dark chocolate chips
Instructions
- Preheat the oven to 250 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, mix together the Chex cereal, almonds, and pretzels. Place the mixture on the lined baking sheet and set aside.
- In a small saucepan, melt your coconut oil. Add the honey, coconut sugar, and cinnamon and stir until the coconut sugar is dissolved. Remove from heat.
- Drizzle the honey mixture over the Chex mixture and use your hands to make sure it is evenly coated.
- Bake in the 250 degree oven for 1 hour, stirring every 15 minutes.
- Allow the Chex mix to cool completely and then transfer it to a large bowl. Add the coconut chips, superberry blend, and dark chocolate chips and mix well. Enjoy!
Notes
*I prefer refined coconut oil for this so there isn’t an overall coconut flavor. Unrefined will work also, but there will be a coconut flavor.
**If you don’t have the specific blend I used, substitute 1 cup of dried fruit of your choice and 1 cup of seeds of your choice.
