Description
This is a creamy, dreamy bowl of pumpkin and cottage cheese, lightly sweetened and perfectly spiced.
Ingredients
- 2 cups cottage cheese
- 1 (15 ounce) can pumpkin purée
- 1 teaspoon pure stevia powder, or more to taste
- 1 teaspoon cinnamon
- 1 banana
- 2 tablespoons walnut pieces
Instructions
Place all ingredients in a blender and blend until smooth.
2. Transfer the the mixture to two separate container with lids.
3. Store in the refrigerator overnight.
4. When ready to eat, top the pumpkin cottage cheese mixture with half of the banana
(sliced) and half of the walnut pieces. Enjoy!
Notes
If you don’t love stevia, maple syrup or honey can be used to sweeten this. Add 1 tablespoon at a time, to taste.
