Description

This Protein Banana Bread is an easy, one-bowl recipe with over 11 grams of protein per slice!


Ingredients

  • 3 bananas, mashed
  • 3 large eggs
  • 1/2 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 2 1/2 cups almond flour
  • 1/2 cup vanilla protein powder
  • 1/3 cup coconut sugar
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon

Optional Add-ins: 1/2 cup chocolate chips, walnuts, or blueberries


Instructions

  1. Preheat the oven to 350 degrees. Line a loaf pan with parchment paper.
  2. In a medium bowl, combine the mashed bananas, eggs, cottage cheese, and vanilla extract.
  3. Add the almond flour, vanilla protein powder, baking powder, and cinnamon. Stir until combined.
  4. Fold in any add-ins you are using.
  5. Transfer the batter to the loaf pan. Bake for 50 minutes. Allow to cool on a baking rack for 10 minutes before removing from pan and slicing to serve. Enjoy!
