Description

Perfectly moist and flavorful, this is the perfect banana chocolate chip bread recipe.


Ingredients

  • 1 1/2 cups mashed overripe bananas*
  • 1/4 cup butter, melted
  • 2/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 tablespoon pure vanilla extract
  • 1/2 cup yogurt
  • 2 cups whole wheat pastry flour*
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups chocolate chips or chocolate chunks, divided

Instructions

  1. Preheat the oven to 350 degrees. Line a standard sized loaf pan with parchment paper,
    allowing it to overhang on the sides. Spray the paper and pan with cooking oil. Set aside.
  2.  In a large bowl, mix together the mashed banana and butter. Add in the sugars and stir to
    combine.
  3.  Add the eggs and vanilla extract, and stir to combine.
  4.  Add the yogurt, and again, stir to combine.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Add the dry ingredients to the bowl with the wet ingredients and stir until everything is
    combined and no flour spots remain. Do not over mix.
  7. Fold in 1 cup of the chocolate chunks. Transfer the mixture to your loaf pan and top with
    the remaining 1/4 cup chocolate chips/ chocolate chunks.
  8. Bake for 50—60 minutes, until the top of the loaf is golden brown and a toothpick inserted
    into the center of the loaf comes out clean/with a few crumbs.
  9. Allow to cool on a baking rack before slicing. Enjoy!
