- 1 1/2 cups mashed overripe bananas*
- 1/4 cup butter, melted
- 2/3 cup light brown sugar
- 1/3 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 tablespoon pure vanilla extract
- 1/2 cup yogurt
- 2 cups whole wheat pastry flour*
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups chocolate chips or chocolate chunks, divided
Instructions
- Preheat the oven to 350 degrees. Line a standard sized loaf pan with parchment paper,
allowing it to overhang on the sides. Spray the paper and pan with cooking oil. Set aside. - In a large bowl, mix together the mashed banana and butter. Add in the sugars and stir to
combine. - Add the eggs and vanilla extract, and stir to combine.
- Add the yogurt, and again, stir to combine.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the bowl with the wet ingredients and stir until everything is
combined and no flour spots remain. Do not over mix. - Fold in 1 cup of the chocolate chunks. Transfer the mixture to your loaf pan and top with
the remaining 1/4 cup chocolate chips/ chocolate chunks. - Bake for 50—60 minutes, until the top of the loaf is golden brown and a toothpick inserted
into the center of the loaf comes out clean/with a few crumbs. - Allow to cool on a baking rack before slicing. Enjoy!
