Peach Baked Oatmeal (Easy + Healthy!)

Description

This Peach Baked Oatmeal takes minutes to prepare and is a healthy, delicious breakfast!


Ingredients

  • 2 cups old fashioned rolled oats
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 375 degrees.  Grease a medium baking dish and set aside.
  2. Cut one peach into small pieces and the second peach into slices.
  3. In a large bowl, mix together the dry ingredients (oats, cinnamon, baking powder, and salt).  Add the wet ingredients (milk, maple syrup, egg, and vanilla).  Stir well. Stir in the small peach pieces.
  4. Pour the oatmeal batter into your casserole dish.  Top the mixture with the peach slices. Bake in the preheated oven for 20-25 minutes.  Enjoy!
