Mini Banana Muffins Recipe

Description

These Mini Banana Muffins are moist and delicious! Like banana bread in mini muffin form, they are the perfect bite-sized snack that kids love.


Ingredients

  • 1 1/2 cups flour*
  • 1/2 cup coconut sugar**
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 medium bananas, mashed
  • 1/3 cup avocado oil
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • Optional: 1/4 cup stevia-sweetened chocolate chips

Instructions

  1. Preheat your oven to 375 degrees. Grease a mini muffin pan and set aside.
  2. Combine flour, coconut sugar, baking powder, baking soda, cinnamon, and salt in a medium bowl.
  3. In a separate bowl, whisk together the mashed bananas, oil, vanilla extract, and egg until it is well combined.
  4. Add the wet ingredients to the dry ingredients and stir to combine. If using, fold in your chocolate chips.
  5. Scoop batter into prepared muffin pan, filling each cup about 2/3 way full.
  6. Bake in the preheated oven until a toothpick inserted in the middle comes out clean, 12-15 minutes.
  7. Allow to cool on a baking rack for 10 minutes before removing the muffins from the pan. Enjoy!

Notes

Recipe Notes

  1. I used a gluten-free flour for this recipe (Cup 4 Cup Wholesome Gluten Free Flour). You can use any all-purpose flour (gluten-free or regular) or whole wheat pastry flour for this recipe. Regular whole wheat flour will have more dense results, so if you prefer that either be prepared for a different texture, or you can use 1/2 whole wheat and 1/2 all-purpose. I haven’t tested it, but oat flour will likely work as well. I don’t recommend almond flour or coconut flour for this recipe.
  2. If you prefer no added sugar, you may substitute erythritol or a monk fruit sweetener for this recipe in the same amount. Regular granulated sugar will also work.
