Loaded Sweet Potato Fries

Description

Healthy, easy, and delicious, sweet potato fries are loaded with all the best toppings!


Ingredients

  • 1 pound sweet potatoes
  • 2 tablespoon avocado oil
  • 1 teaspoon ancho chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup cashew cheese sauce (recipe in notes)
  • 1 green onion
  • 1/2 cup grape tomatoes
  • 1/2 cup chopped cilantro

Instructions

  1. Start with whole sweet potatoes. Cut them evenly into fry shapes. I do this by slicing the sweet potato width-wise into rounds, and then slicing those rounds into fry shapes.
  2. Place the sweet potatoes in a large bowl, and top with the seasonings (chili powder, cumin, garlic salt, salt, and pepper) and avocado oil. Toss to evenly coat.
  3. Cook the sweet potato fries. You can use an air fryer or the oven.
  4. For the air fryer, place the sweet potato fries in a single layer or the air fryer tray (or basket if you have that kind–don’t overcrowd the sweet potatoes or they won’t get as crispy) Preheat the air fryer to 400 degrees and cook for 8 minutes, turning half way through. Different air fryers may result in different cooking time, so keep an eye on yours and check for doneness as necessary.
  5. For the oven, preheat the oven to 425 degrees. Place the sweet potato fries on a sheet pan lined with parchment paper. Cook for 25-40 minutes, until they are browned, flipping them half way through the cooking time.
  6. Place your cooked fries on a serving tray and sprinkle with green onions, cilantro, tomatoes, and drizzle with the cashew cheese sauce. Serve immediately!

Notes

For the Cashew Cheese Sauce:

  • 1 cup cashews
  • 1 cup water
  • 1/2 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 2 teaspoons tomato paste
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  1. Place the cashews in a small bowl and fill it with water until they are completely covered by at least 2 inches. Allow the cashews to soak for 4+ hours.
  2. Drain the soaked cashews. Discard the soaking water.
  3. In a powerful high speed blender, add the cashews, 1 cup water, nutritional yeast, tomato paste, lemon juice, garlic salt, smoked paprika, and salt. Blend on high until you have a completely smoothy, creamy sauce.
  4. This will make more than you need for this recipe but there are many uses for this delicious sauce! Serve it with pasta or on top of vegetables. Sauce may be stored in an airtight container in the refrigerator for 4-6 days.
