Description

A tasty and light snack


Ingredients

  • 1 loaf prepared focaccia bread (or pizza crust–that works, too!)
  • 1 cup dried figs
  • 1/4 cup water
  • 1/2 cup crumbled goat cheese
  • ~1/2 large bunch arugula, coarsely chopped

Instructions

  1. In a food processor, process the figs until they are broken down.  Add the water and continue to process until it is of a spreadable consistency.
  2. Spread the mixture on the bread and top with goat cheese.
  3. Put in a 300 degree oven for approximately 5 minutes, until the cheese just starts to get melty.  (Yes, that is the technical term.)  Pull it from the oven and top with arugula.  Cut into rectangles and serve immediately.
