An easy and tasty appetiser for entertaining!


Ingredients

Scale

2 pounds cherry tomatoes (mixed color for best presentation)

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 baguette loaf, sliced into 20+ slices

1 1/2 cups crumbled feta

2 ounces cream cheese

2 tablespoons extra virgin olive oil

juice from 1/2 lemon

12 pinches salt

freshly ground black pepper

1015 large basil leaves, cut into strips


Instructions

 

Dice your tomatoes and put them into a non-reactive bowl. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper and place in the refrigerator while you prepare the cheese and bread.

Put the feta, cream cheese, olive oil, lemon juice, salt and pepper into the food processor and process until very smooth.  Next, place your baguette slices on a baking sheet and toast under your oven’s broiler, about 1-2 minutes per side.  {Watch to make sure it doesn’t burn}

Spread each toasted baguette slice with a smear of the whipped feta and then top some of the diced tomatoes.  Sprinkle the basil on top of the tomatoes.  Serve and enjoy!
