Crockpot apple cinnamon bread pudding

Description

With apples, cinnamon, and studded with raisins, this is a perfect fall dessert.


Ingredients

  • 4 cups bread of choice, preferably not fresh, cubed
  • 2 apples, peeled, cored, and cubed
  • 1 cup raisins
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup pure maple syrup
  • 3 cups almond milk (or any milk)

Instructions

  1. Spray your crockpot with non-stick cooking spray.  Add the bread cubes, apples, and raisins and mix so the raisins and apples are distributed evenly throughout the bread.
  2. In a small bowl, whisk together the eggs, vanilla, cinnamon, salt, and maple syrup.  Whisk in the milk.
  3. Pour the milk mixture over the bread.  If necessary, push down the bread with a spatula so it is completely covered.  Allow the bread to sit for 20 minutes before turning on the crockpot.  Cook on low for 8-10 hours.
