Description
Delicious herbed chicken breast pairs perfectly with spiced cranberries in this easy dish.

- 4 boneless, skinless chicken breasts
- 2 tablespoons chopped fresh rosemary (leaves removed from stem and finely chopped)
- 1 tablespoon finely chopped fresh thyme leaves
- 1/2 teaspoon sal
- 1/4 teaspoon pepper
- 1 tablespoon avocado oil
- 1/4 cup balsamic vinegar
- 12 ounces fresh cranberries
- 1/3 cup maple syrup
- 2 tablespoons finely chopped fresh ginger
- 1/4 teaspoon cinnamon
- 1/4 teaspoon dried cloves
Instructions
- Preheat the oven to 400 degrees F.
- Pat the chicken dry.
- In a small bowl, combine the rosemary, thyme, salt, and pepper. Season the dried chicken
breasts on both sides. - Heat the avocado oil over medium high heat in a large oven-proof skillet. (I use a cast
iron skillet for this.) - When the pan is hot, add the chicken breasts. Cook until browned, about 3 minutes per
side. - Meanwhile, in a medium bowl, combine the cranberries, maple syrup, ginger, cinnamon,
and dried cloves. - Add the balsamic vinegar to the pan and deglaze the bottom of the skillet .
- Add the cranberries to the skillet and nestle them between the chicken breasts.
- Transfer the skillet to the oven and cook for an additional 8-15 minutes*, until the
internal temperature of the chicken is 165 degrees and the cranberries are starting to
burst. - Serve each chicken breast topped with the cranberries. Enjoy!

Note: the oven cooking time will vary depending on the size of your chicken breasts. Do not overcook.
