Description

Delicious herbed chicken breast pairs perfectly with spiced cranberries in this easy dish.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons chopped fresh rosemary (leaves removed from stem and finely chopped)
  • 1 tablespoon finely chopped fresh thyme leaves
  • 1/2 teaspoon sal
  • 1/4 teaspoon pepper
  • 1 tablespoon avocado oil
  • 1/4 cup balsamic vinegar
  • 12 ounces fresh cranberries
  • 1/3 cup maple syrup
  • 2 tablespoons finely chopped fresh ginger
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon dried cloves

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pat the chicken dry.
  3.  In a small bowl, combine the rosemary, thyme, salt, and pepper. Season the dried chicken
    breasts on both sides.
  4.  Heat the avocado oil over medium high heat in a large oven-proof skillet. (I use a cast
    iron skillet for this.)
  5. When the pan is hot, add the chicken breasts. Cook until browned, about 3 minutes per
    side.
  6.  Meanwhile, in a medium bowl, combine the cranberries, maple syrup, ginger, cinnamon,
    and dried cloves.
  7. Add the balsamic vinegar to the pan and deglaze the bottom of the skillet .
  8. Add the cranberries to the skillet and nestle them between the chicken breasts.
  9. Transfer the skillet to the oven and cook for an additional 8-15 minutes*, until the
    internal temperature of the chicken is 165 degrees and the cranberries are starting to
    burst.
  10. Serve each chicken breast topped with the cranberries. Enjoy!

Note: the oven cooking time will vary depending on the size of your chicken breasts. Do not overcook.
