This Cottage Cheese Chocolate Mousse is a healthy treat with a decadent texture you will fall in love with.
Ingredients
- 16 ounces cottage cheese
- 6 ounces bittersweet chocolate baking bars, chopped
- 1/3 cup maple syrup, or to taste
Instructions
Step 1: Melt the chocolate. Chop your bittersweet chocolate bars and melt using a double boiler on the stovetop, or in the microwave in 30-second increments, stirring between each round until fully melted and smooth. Set aside to cool slightly.
Step 2: Blend the cottage cheese. Add your cottage cheese to a blender and blend until completely smooth and creamy with no curds remaining.*
Step 3: Combine everything. In a large bowl, stir together the melted chocolate, blended cottage cheese, and maple syrup until the mixture is fully combined and uniform. It will look glossy and rich.
Step 4: Chill and serve. Divide the mousse evenly into 4 individual serving containers. Cover and refrigerate for at least 1 hour before serving to allow the mousse to set up and the flavors to develop.

*This step is key! Don’t skip it or try to just stir it in. The blending is what gives the mousse its silky texture.
