Description

These chocolate peanut butter balls are made with a few simple ingredients and are so delicious!

Ingredients

Units Scale
  • 1 cup natural peanut butter
  • 1/2 cup honey
  • 3 1/2 cups puffed rice cereal (such as Rice Krispies or other brand)
  • 9 ounces stevia sweetened chocolate chips

Instructions

  1. Line a rimmed baking sheet with parchment paper, waxed paper, or a silicone baking mat.
    Set aside.
  2. In a medium bowl, stir the peanut butter and honey until well combined. Add the cereal and
    stir again until combined.
  3. Roll the peanut butter mixture into 1-inch balls and place on the lined baking tray. Place the
balls in the freezer to firm, at least 20 minutes.
  4.  Meanwhile, melt the chocolate chips. You can use your microwave, or use a double boiler
and melt them on the stovetop.
  5. Use tongs or a spoon to dip the firmed peanut butter balls into the chocolate, and then
place them back on the tray. Once all of the balls have been dipped in chocolate, place the
tray back into the freezer for 20-30 minutes, until the chocolate is hardened.
  6. Store these in the refrigerator in an airtight container. Enjoy!
