Description
This Chocolate Almond Butter is rich and delicious! It’s a healthy option with no added sugar and easy to make at home!
Ingredients
- 3 cups (approximately 1 pound) almonds*
- 3/4 cup stevia-sweetened dark chocolate chips
- 1/2 teaspoon pure vanilla extract
- salt, to taste**
Instructions
- Preheat the oven to 350 degrees. On a rimmed baking sheet, roast the almonds for 10 minutes. Allow them to cool for a few minutes.
- Put the almonds in the food processor and process until smooth and creamy.
- Meanwhile, melt the chocolate chips. You can use a double boiler on the stovetop, or the microwave. If using the microwave, heat them in 30 second increments, stirring each time and checking if they are melted.
- Pour the melted chocolate and vanilla into the food processor and continue to process until it is fully combined and creamy, stopping to scrape the sides of the container as necessary.
- Store in an airtight container at room temperature for up to a week, in the fridge for up to a month.
Notes
*When I couldn’t find raw almonds, I used already roasted/salted almonds for this recipe. The result is a deeper roasted flavor. I prefer starting with raw almonds, but if you can only find roasted, they work, too. I still recommend roasting them for 10 minutes before processing as the results are better when starting with warm almonds.
**If you start with unsalted almonds, add salt to taste. If your almonds are already salted, you likely won’t need to add any.
