Description
This Carrot and Lentil Soup is made with simple ingredients and it’s easy to make!

- 2 tablespoons avocado oil
- 1/2 small onion, finely chopped
- 1 pound carrots, sliced
- 1 tablespoon minced ginger (from about 1 inch ginger root, peeled)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups vegetable or chicken stock
- 1 cup red lentils
- 1 (13.5 ounce) can coconut milk
Instructions
- In a large soup pot, heat the oil over medium heat. Add the onion, carrots, ginger, cumin,
paprika, salt, and pepper, and sauté for 10 minutes. - Add the stock and red lentils and bring to a boil. Reduce heat to bring the liquid to a
simmer, cover, and allow to simmer for 30 minutes, stirring a few times during this time. - Stir in the coconut milk and allow to heat for a few minutes more. Enjoy!
