Description

This Carrot and Lentil Soup is made with simple ingredients and it’s easy to make!


Ingredients

  • 2 tablespoons avocado oil
  • 1/2 small onion, finely chopped
  • 1 pound carrots, sliced
  • 1 tablespoon minced ginger (from about 1 inch ginger root, peeled)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable or chicken stock
  • 1 cup red lentils
  • 1 (13.5 ounce) can coconut milk

Instructions

  1. In a large soup pot, heat the oil over medium heat. Add the onion, carrots, ginger, cumin,
    paprika, salt, and pepper, and sauté for 10 minutes.
  2. Add the stock and red lentils and bring to a boil. Reduce heat to bring the liquid to a
    simmer, cover, and allow to simmer for 30 minutes, stirring a few times during this time.
  3. Stir in the coconut milk and allow to heat for a few minutes more. Enjoy!
