Description

These Cacao Coconut Energy Balls are easy to make in a food processor and have great chocolate + coconut flavor.


Ingredients

  • 2 cups pitted dates
  • 1 cup walnut pieces
  • 3/4 cup unsweetened flaked coconut, divided
  • 1/2 cup raw cacao powder
  • 1/4 cup sunflower seeds
  • 2 tablespoons unsweetened vanilla almond milk

Instructions

  1. Place all of the ingredients except 1/4 of the coconut in a food processor.
  2. Process the ingredients until they are sticky enough to form a ball. (If you press a little of the mixture together with your fingers, it should stick together.)
  3. Roll the mixture into balls, and then roll the balls into the remaining shredded coconut.
  4. Store in the refrigerator. These may also be frozen.
