Blueberry Cookies Recipe

Description

These wholesome cookies are made with whole grains and no refined sugar. Soft and chewy, they’re healthy enough to eat for breakfast or a snack!


Ingredients

  • 2 bananas
  • 1 cup almond butter or peanut butter
  • 1 egg
  • 1/3 cup maple syrup
  • 2 cups rolled oats
  • 6 tablespoons ground flaxseed meal
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mash the two bananas until they are smooth. Add 1 cup almond butter, 1 egg, 1/3 cup maple syrup, and stir until combined.
  3. 3. Add 2 cups oats, 6 tablespoons ground flaxseed meal, 1/2 teaspoon cinnamon, 1/2 teaspoon ginger, and 1/4 teaspoon salt. Stir until combined.
  4. Fold in the blueberries. Use a 1/4 cup to scoop the mixture onto a baking sheet lined with
    parchment paper or a silicone baking mat. Use the back of the measuring cup to flatten the
    scoops.
  5. Bake in the preheated oven for 12-15 minutes, until the cookies look set on top. Allow to
    cool on a baking rack completely before removing from cookie sheet.
