These Banana Nut Baked Oatmeal Muffins are easy to make in one bowl, naturally sweetened, and a healthy, hearty, portable breakfast idea!
Ingredients

- 3 large ripe bananas
- 1 1/2 cups unsweetened almond milk (or milk of choice)
- 2 eggs*
- 1/4 cup honey
- 1 1/2 teaspoon pure vanilla extract
- 3 cups old fashioned rolled oats
- ½ teaspoon salt
- 1 1/2 teaspoon baking powder
- 1 cup walnut pieces, chopped
Instructions
- Preheat the oven to 350 degrees.
- Lightly grease 12 muffin cups or line with silicone baking cups. (affiliate link)
- In a medium bowl, mash the bananas well.
- Add the milk, eggs, honey, and vanilla and stir to combine.
- Add the oats, salt, and baking powder and stir to combine.
- Stir in 3/4 cup walnuts.
- Pour the mixture into the muffin cups and sprinkle the remaining walnuts on top.
- Bake in the preheated oven for 25 minutes. Enjoy!
