Description

A cold soup perfect for the warm months


Ingredients

Scale
  • 810 ears of corn (cut off kernels)*
  • 2 cups raw cashews, soaked in 4 cups of water for a few hours
  • 4 cups water (fresh or the cashew water)
  • 12 cloves garlic (depending on size and taste preference–raw garlic has a strong flavor)
  • 1 tablespoon umeboshi or ume plum vinegar
  • extra virgin olive oil
  • sea salt
  • black pepper
  • lime juice

Instructions

  1. Put the corn, cashews, water, garlic, and vinegar in a blender and blend until smooth.  While blending, drizzle in a small amount or up to 1/2 cup of the olive oil.  Season to taste with sea salt, black pepper, and fresh lime juice.  Serve and enjoy!
