This Crockpot Vegan Coconut Curry Chickpea Lentil Soup is the easiest soup to make and is full of flavor! Low calorie, too!


Ingredients

Units Scale
  • 2 (15 ounce) cans chickpeas (garbanzo beans), drained and rinsed
  • 1 cup dry lentils, picked over and rinsed
  • 1 large sweet potato, cut into small cubes
  • 1 (15 ounce) can lite coconut milk
  • 2 tablespoons curry powder (I used mild curry)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 cups vegetable broth

Instructions

  1. Put all ingredients in the slow cooker and mix well.
  2. Cook on high heat for 3-4 hours or low for 6-8 hours. Taste and add more salt and pepper if you prefer. Enjoy!
